Week 42- Amber Perkins

Chinese Cuisine

My dad married Yanmin a few years ago. She is a lovely, kind, thoughtful woman who moved here from Guangzhou, China. This past weekend, she graciously agreed to show me how to create some of her favorite dishes.

 

This is the “National Dish” with matchstick potatoes, chiles, green onion, ginger, soy sauce, rice/wheat vinegar, sugar, salt, and oil. She made it extra spicy for me.

 

 

This is a cold dish. Cucumbers, sea weed, and bean noodles with the delicious sauce that I’ll show next.

 

 

Start with garlic and paprika. Pour piping hot oil into the bowl. Add the rice/wheat vinegar, soy sauce, sugar and salt.

 

Dumplings! These are made with ground pork. The folding of the wrapper is the tricky part. Apparently, I’m naturally from Southern China. She tried to show me the Northern technique, but mine kept coming up Southern. Story of my life.

 

 

Spicy tofu, cooked a thousand times. Spiky meatballs.
